Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 lemon, juiced
  • 1 tsp dried herbs (such as thyme or oregano)
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced bell pepper and zucchini, and cook for about 5-7 minutes until they start to soften.
  4. Push the veggies to the side of the skillet and add the shrimp.
  5. Season the shrimp with salt, pepper, and dried herbs, and cook for about 2-3 minutes on each side until they are pink and opaque.
  6. Squeeze the juice of one lemon over the shrimp and veggies, toss to combine, and cook for an additional minute.
