- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 lemon, juiced
- 1 tsp dried herbs (such as thyme or oregano)
- Salt and pepper to taste
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced bell pepper and zucchini, and cook for about 5-7 minutes until they start to soften.
- Push the veggies to the side of the skillet and add the shrimp.
- Season the shrimp with salt, pepper, and dried herbs, and cook for about 2-3 minutes on each side until they are pink and opaque.
- Squeeze the juice of one lemon over the shrimp and veggies, toss to combine, and cook for an additional minute.
