Ingredients

- 1 boneless chicken thigh
- 2 lemon slices
- 1 cup baby carrots
- 1 cup broccoli florets
- 1 tbsp olive oil
- 1 tbsp balsamic glaze or honey
- 1 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1 tbsp grated parmesan
- Salt & black pepper to taste
Instructions
- Marinate the chicken thigh with garlic powder, Italian seasoning, salt, pepper, and a squeeze of lemon. Grill or pan-sear with lemon slices until golden brown.
- Toss baby carrots in balsamic glaze or honey, olive oil, salt, and pepper, then roast until tender.
- Toss broccoli florets with olive oil, garlic powder, salt, and parmesan, then roast until crisp and cheesy.
- Plate the grilled chicken with roasted lemon on top, glazed carrots on the side, and cheesy broccoli.
- Serve hot and fresh, garnished with fresh herbs if desired.
Notes
For extra flavor, let the chicken marinate for at least 30 minutes before cooking. You can also substitute the vegetables based on availability.
