Instructions
- In a mixing bowl, combine chia seeds, almond milk, maple syrup (or honey), lemon juice, lemon zest, vanilla extract, and a pinch of sea salt.
- Whisk the mixture together until well combined, ensuring no lumps from the chia seeds.
- Cover the bowl and refrigerate for at least 240 minutes, or preferably overnight, to allow the chia seeds to absorb the liquid.
- Once the pudding has set, stir and portion into serving cups.
- Top with fresh berries or desired toppings before serving.
Notes
Adjust the sweetness by modifying the amount of maple syrup or honey. Use fresh lemons for best flavor, but bottled lemon juice can work in a pinch.
