- 200 g digestive biscuits or graham crackers, crushed
- 100 g unsalted butter, melted
- 500 g cream cheese, softened
- 200 ml heavy cream
- 150 g granulated sugar
- 2 tbsp lemon juice
- (Optional) Melted chocolate for swirling
Instructions
- Preheat the oven to 160°C (320°F).
- In a bowl, combine the crushed biscuits or graham crackers with melted butter. Press this mixture into the bottom of a springform pan to create the crust.
- In a separate bowl, beat the cream cheese until smooth. Add in the heavy cream, granulated sugar, and lemon juice. Mix until everything is combined.
- Pour the cheesecake filling over the crust in the springform pan.
- (Optional) For a chocolate swirl effect, swirl in melted chocolate at this stage.
- Bake in the preheated oven for about 45 minutes, or until the edges are set but the center still has a slight jiggle.
- Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
Ensure cream cheese is at room temperature for a smooth filling. Do not overmix the filling to keep the cheesecake creamy. Letting the cheesecake cool slowly in the oven helps prevent cracks.
