Ingredients

  • 200 g digestive biscuits or graham crackers, crushed
  • 100 g unsalted butter, melted
  • 500 g cream cheese, softened
  • 200 ml heavy cream
  • 150 g granulated sugar
  • 2 tbsp lemon juice
  • (Optional) Melted chocolate for swirling

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, combine the crushed biscuits or graham crackers with melted butter. Press this mixture into the bottom of a springform pan to create the crust.
  3. In a separate bowl, beat the cream cheese until smooth. Add in the heavy cream, granulated sugar, and lemon juice. Mix until everything is combined.
  4. Pour the cheesecake filling over the crust in the springform pan.
  5. (Optional) For a chocolate swirl effect, swirl in melted chocolate at this stage.
  6. Bake in the preheated oven for about 45 minutes, or until the edges are set but the center still has a slight jiggle.
  7. Turn off the oven, crack the door, and let the cheesecake cool in the oven for an hour.
  8. Refrigerate for at least 4 hours or overnight before serving.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Do not overmix the filling to keep the cheesecake creamy. Letting the cheesecake cool slowly in the oven helps prevent cracks.
