- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar

- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1/4 cup granulated sugar
- 1 teaspoon cornstarch
- 1/4 cup cold water
- 1 tablespoon unsalted butter
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, mix the graham cracker crumbs, sugar, cinnamon (if using), and melted butter until it resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8–10 minutes or until golden. Let it cool completely.
- Lower the oven temperature to 300°F (150°C).
- In a large bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract, eggs (one at a time), sour cream, and heavy cream. Mix until smooth. Then add the lemon juice and zest, and stir to combine.
- Pour the cheesecake batter into the cooled crust, spreading it evenly. Bake for 55–60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
- Cool the cheesecake to room temperature, then refrigerate for at least 4 hours or overnight.
- For the lemon glaze, combine lemon juice, sugar, and cornstarch in a small saucepan. Stir until dissolved. Add cold water and bring to a simmer over medium heat. Stir until thickened (3–5 minutes), then stir in the butter until melted. Let it cool.
- Once the cheesecake is cool, remove it from the springform pan. Pour the glaze over the top and refrigerate for at least another 30 minutes to set. Slice and serve chilled.
Notes
Serve chilled. Garnish with lemon slices or fresh berries for an extra touch.
