A light and creamy dessert that combines tangy lemon flavor with the richness of cheesecake.

- 1 1/2 cups heavy whipping cream
- 8 oz light cream cheese, softened
- 1/2 cup powdered sugar
- 4 tbsp lemon curd (adjust to taste)
- Lemon slices (for garnish)
- Lemon zest (for garnish)
- Fresh strawberries or raspberries (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- In a large mixing bowl, combine the heavy whipping cream, softened cream cheese, and powdered sugar.
- Beat the mixture on high for about 3 minutes, until stiff peaks form and the mix is light and fluffy.
- Add the lemon curd and stir until it’s well incorporated. Taste and adjust the tartness by adding more lemon curd if desired.
- Divide the mousse into ramekins or parfait glasses.
- Refrigerate the mousse until ready to serve. If it’s going to be in the fridge for more than an hour, cover the ramekins with plastic wrap.
- Just before serving, garnish each portion with lemon slices, lemon zest, strawberries or raspberries, and fresh mint leaves.
Notes
Best consumed within 2-3 days for optimal taste and texture. Can customize with different fruit curds or pureed fruits.
