Lemon Cheesecake Mousse

Description

A light and creamy dessert that combines tangy lemon flavor with the richness of cheesecake.


Ingredients

  • 1 1/2 cups heavy whipping cream
  • 8 oz light cream cheese, softened
  • 1/2 cup powdered sugar
  • 4 tbsp lemon curd (adjust to taste)
  • Lemon slices (for garnish)
  • Lemon zest (for garnish)
  • Fresh strawberries or raspberries (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. In a large mixing bowl, combine the heavy whipping cream, softened cream cheese, and powdered sugar.
  2. Beat the mixture on high for about 3 minutes, until stiff peaks form and the mix is light and fluffy.
  3. Add the lemon curd and stir until it’s well incorporated. Taste and adjust the tartness by adding more lemon curd if desired.
  4. Divide the mousse into ramekins or parfait glasses.
  5. Refrigerate the mousse until ready to serve. If it’s going to be in the fridge for more than an hour, cover the ramekins with plastic wrap.
  6. Just before serving, garnish each portion with lemon slices, lemon zest, strawberries or raspberries, and fresh mint leaves.

Notes

Best consumed within 2-3 days for optimal taste and texture. Can customize with different fruit curds or pureed fruits.
