- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 24 oz cream cheese (softened)
- 1 cup sour cream
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/4 cup heavy cream
- 1/2 cup lemon curd (optional)
- Fresh lemon zest for garnish (optional)
Instructions
- Preheat your oven to 325°F (165°C). Grease and line a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the pan to create a crust. Bake for 8-10 minutes, then let it cool.
- In a large bowl, beat the softened cream cheese until it’s smooth and creamy. Add sour cream, sugar, lemon juice, and lemon zest. Mix until everything is well combined.
- Add eggs one at a time, beating well after each. Stir in heavy cream until the mixture is smooth.
- Pour the cheesecake filling into the cooled crust and smooth the top with a spatula. Bake for 50-60 minutes, until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in there with the door slightly open for 1 hour. After that, chill in the fridge for at least 4 hours or overnight.
- If you’re using lemon curd, gently warm it and spread it over the top of the chilled cheesecake. Garnish with fresh lemon zest if you like.
- Slice the Lemon Cheesecake and serve chilled. Enjoy the deliciously tangy and creamy goodness!
Notes
Make sure your cream cheese is softened for easy mixing. Don’t skip the cooling process in the oven; it helps prevent cracks on the top of the cheesecake. Add more lemon zest for an extra punch of flavor.
