Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, lemon zest, and lemon juice.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake is baking, prepare the cream filling by whipping together the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  10. Once the cake has cooled completely, slice it horizontally to create two layers.
  11. Spread the cream filling between the layers and on top of the cake.
  12. Garnish with additional lemon zest if desired.
