Ingredients

- 4 salmon fillets (5–6 oz each), skin-on or skinless
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 lemon (sliced)
- Salt and pepper to taste
- 1 lb small potatoes (halved)
- 2 cups broccoli florets
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, arrange the potatoes and broccoli. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- In a separate bowl, mix melted butter, minced garlic, and lemon juice.
- Place salmon fillets on top of the veggies, drizzle with the garlic butter mixture, and top with lemon slices.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve warm and enjoy!
Notes
Add fresh herbs like parsley or dill for extra flavor. Store leftovers in an airtight container in the fridge for up to 2 days.
