Ingredients

  • 1 medium sweet potato, baked
  • 1 cup broccoli florets, steamed or sautéed
  • 1 chicken breast, chopped
  • 1 tbsp butter
  • Juice of 1/2 lemon
  • Garlic powder, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for cooking

Instructions

  1. Pierce the sweet potato all over, then bake at 400°F (204°C) for 45-50 minutes until soft.
  2. Lightly steam or sauté the broccoli with olive oil and salt.
  3. In a skillet, sauté the chopped chicken breast in olive oil until golden brown, then add butter, lemon juice, garlic powder, salt, and pepper. Cook until chicken is juicy.
  4. Assemble the power plate with the baked sweet potato, steamed or sautéed broccoli, and lemon butter chicken.
  5. Serve hot, optionally garnished with fresh herbs or chili flakes.

Notes

Pierce sweet potato well for even cooking. Adjust seasonings to taste. For quicker prep, use pre-cooked chicken.
