A delightful no-bake dessert combining creamy cheesecake with refreshing lemon and blueberry flavors, perfect for any occasion.


Ingredients

  • 2 1/2 cups Oreo cookie crumbs (about 26 Oreo cookies)
  • 6 tbsp unsalted butter, melted
  • 2 cups blueberries (fresh or thawed)
  • 1 lemon, juiced
  • 2 tbsp granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 12 drops yellow gel food coloring (optional)
  • Fresh blueberries (for garnish)
  • Lemon slices (for garnish)

Instructions

  1. Make the Blueberry Sauce: Blend the blueberries until smooth. Cook with lemon juice and sugar, simmer for a few minutes, then cool.
  2. Prepare the Crust: Crush the Oreo cookies into fine crumbs, mix with melted butter, and press into the bottom of a pan. Chill in the refrigerator.
  3. Make the Cheesecake Filling: Beat cream cheese and powdered sugar until smooth. Whip heavy cream until stiff peaks form and fold into the cream cheese mixture. Divide in half.
  4. Assemble the Cheesecake: Add cooled blueberry sauce to one half of the cheesecake mix, spread over the chilled crust. To the other half, add lemon zest, lemon juice, and vanilla extract. Spread over the blueberry layer.
  5. Create the Swirl: Spoon more blueberry sauce on top and swirl gently with a knife.
  6. Chill: Cover and refrigerate for at least 360 minutes (6 hours) until firm.
  7. Serve: Remove from pan, garnish with fresh blueberries and lemon slices, slice, and enjoy!

Notes

For the best flavor, use fresh blueberries in season. Make sure cream cheese is softened to room temperature for a smooth filling. Chill properly to help the cheesecake set. You can use graham cracker crumbs instead of Oreos for a different flavor.
