- 1 1/2 cups fresh or frozen blueberries
- 1/3 cup water
- 1/4 cup granulated sugar
- 2 cups heavy cream
- 1/4 cup honey
- 1 cup lemon curd
- 1 tablespoon lemon zest (for garnish)
Instructions
- In a small pot, stir together the blueberries, water, and sugar.
- Cook over medium-low heat until the mixture thickens and reduces by half, about 5-10 minutes. Set aside to cool completely.
- In a large mixing bowl, whip the heavy cream and honey on high speed until soft peaks form.
- In serving glasses, alternate layers of whipped cream, the blueberry mixture, and lemon curd.
- Top each parfait with a sprinkle of lemon zest for garnish.
Notes
Make the blueberry sauce ahead of time and allow it to cool for efficiency when assembling. Use homemade lemon curd for enhanced flavor, but store-bought works fine too.
