A refreshing dessert with layers of creamy lemon curd, sweet blueberry syrup, and light whipped cream, perfect for any occasion.
Ingredients

- 1 1/2 cups blueberries (fresh or frozen)
- 1/3 cup water
- 1/4 cup granulated sugar
- 2 cups heavy cream
- 1/4 cup honey
- 1 cup lemon curd (store-bought or homemade)
- 1 tablespoon lemon zest (for garnish)
Instructions
- In a small pot, combine blueberries, water, and sugar. Cook over medium-low heat, stirring occasionally, until thick and syrupy (about 5-10 minutes). Remove from heat and let cool.
- In a large bowl, mix heavy cream and honey. Whip on high speed until soft peaks form.
- In serving glasses, alternate layers of whipped cream, blueberry syrup, and lemon curd, starting with cream, then syrup, then curd. Repeat layers until filled.
- Top with lemon zest. Serve immediately or refrigerate until ready to serve.
Notes
Best served chilled. Store leftovers in the fridge and consume within a couple of days for optimal flavor.
