Description

A refreshing dessert with layers of creamy lemon curd, sweet blueberry syrup, and light whipped cream, perfect for any occasion.


Ingredients

  • 1 1/2 cups blueberries (fresh or frozen)
  • 1/3 cup water
  • 1/4 cup granulated sugar
  • 2 cups heavy cream
  • 1/4 cup honey
  • 1 cup lemon curd (store-bought or homemade)
  • 1 tablespoon lemon zest (for garnish)

Instructions

  1. In a small pot, combine blueberries, water, and sugar. Cook over medium-low heat, stirring occasionally, until thick and syrupy (about 5-10 minutes). Remove from heat and let cool.
  2. In a large bowl, mix heavy cream and honey. Whip on high speed until soft peaks form.
  3. In serving glasses, alternate layers of whipped cream, blueberry syrup, and lemon curd, starting with cream, then syrup, then curd. Repeat layers until filled.
  4. Top with lemon zest. Serve immediately or refrigerate until ready to serve.

Notes

Best served chilled. Store leftovers in the fridge and consume within a couple of days for optimal flavor.
