- 1 1/2 cups blueberries (fresh or frozen)
- 1/3 cup water
- 1/4 cup granulated sugar
- 2 cups heavy cream
- 1/4 cup honey
- 1 cup lemon curd (store-bought or homemade)
- 1 tablespoon lemon zest (for garnish)
Instructions
- Prepare the Blueberry Syrup: In a small pot, combine the blueberries, water, and sugar. Cook over medium-low heat, stirring occasionally, until the mixture is thick and syrupy and reduced by half (about 5-10 minutes). Remove from heat and let it cool completely.
- Make the Whipped Cream: In a large mixing bowl, combine the heavy cream and honey. Using a hand mixer or stand mixer fitted with the whisk attachment, whip the cream on high speed until soft peaks form.
- Assemble the Parfaits: In serving glasses or bowls, alternate layers of whipped cream, blueberry syrup, and lemon curd. Start with a layer of whipped cream, then add a layer of blueberry syrup, followed by a layer of lemon curd. Repeat the layers until the glasses are filled.
- Garnish and Serve: Top each parfait with a sprinkle of lemon zest. Serve immediately or refrigerate until ready to serve.
Notes
Best served chilled and can be stored for up to two days in the refrigerator.
