- 1 cup sugar
- 3 eggs
- Zest of 2 lemons
- 1 cup milk
- 1/2 cup oil
- 1 tablespoon vanilla essence
- 3 cups flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup blueberries
Instructions
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the sugar and lemon zest.
- Add the eggs, milk, vanilla, and oil into the bowl, and whisk until smooth.
- In a separate bowl, sieve the flour, baking powder, and salt together.
- Fold the dry ingredients into the egg mixture gently until combined.
- Finally, fold in the blueberries carefully.
- Pour the batter into a greased baking loaf tin.
- Bake in the oven for 30 to 40 minutes. Check if it’s done by inserting a toothpick in the center; it should come out clean.
