- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon unsweetened cocoa powder
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1–2 tablespoons red food coloring gel
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- 1 teaspoon unflavored gelatin powder
- 3 tablespoons cold water
- 1 (3-ounce) package strawberry flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- Fresh strawberries for garnish
- Whipped cream for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, mix buttermilk, oil, egg, vinegar, vanilla, and red food coloring.
- Combine wet ingredients into dry and pour into the prepared pan.
- Bake for 25-30 minutes until a toothpick comes out clean. Let cool.
- Prepare cheesecake by blooming gelatin in cold water, then dissolve in the microwave.
- Beat cream cheese, sugar, and vanilla until smooth. Fold in whipped cream and add dissolved gelatin.
- Place cooled cake back in springform pan and pour cheesecake mix over it. Refrigerate until set (at least 2 hours).
- Make strawberry jelly by dissolving gelatin in boiling water, then adding cold water. Let it cool to room temperature.
- Pour the jelly over the set cheesecake and refrigerate again for at least 4 hours or overnight until fully set.
- Remove from pan, decorate with strawberries and whipped cream, and serve.
Notes
Ensure all ingredients are at room temperature before starting. Allow each layer to cool completely before adding the next.
