Ingredients

  • 2 cups granulated sugar
  • 3/4 cup dark cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Chocolate frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round baking pans or line them with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for about 2 minutes until smooth. Stir in the boiling water until fully combined.
  4. Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  5. Once cooled, place one layer on a serving plate and spread a thick layer of chocolate frosting on top. Place the second layer on top and frost the top and sides.
  6. Refrigerate the frosted cake for at least 1 hour to set. Slice and enjoy!

For best results, avoid overmixing the batter and use high-quality cocoa powder.
