- 2 1/2 cups Oreo cookie crumbs
- 6 tablespoons unsalted butter, melted
- 4 (8 oz.) packages cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- 10 ounces bittersweet chocolate, chopped
- 3/4 cup heavy cream
- 6 oz. bittersweet chocolate, finely chopped
- 1 tablespoon granulated sugar
Instructions
- Prepare the crust by finely crushing Oreo cookies and mixing them with melted butter. Press this mixture into the bottom of a greased 9-inch springform pan and freeze it for about 30 minutes.
- Melt 10 ounces of bittersweet chocolate and let it cool slightly. In a mixing bowl, beat together the cream cheese and powdered sugar until smooth.
- In a separate bowl, whip 2 cups of heavy cream until stiff peaks form. Carefully fold this whipped cream into the cream cheese mixture.
- Divide the cheesecake mixture in half. Mix the cooled melted chocolate into one half, then layer it over the crust. Spoon the plain cheesecake mixture on top and refrigerate for at least 1 hour to set.
- For the topping, heat 3/4 cup of heavy cream in a saucepan. Add 6 ounces of chopped chocolate and 1 tablespoon of sugar. Stir until smooth, then let it cool slightly. Pour this chocolate mixture over the chilled cheesecake.
- Refrigerate again until set, about 30 minutes. When ready to serve, remove from the pan, slice, and enjoy with extra chocolate sauce if desired!
Notes
This cheesecake is best served chilled. Pair it with fresh berries or a dollop of whipped cream for added indulgence.
