Description

A creamy, layered chocolate cheesecake with a crunchy Oreo crust that’s perfect for any celebration.


Ingredients

  • 2 1⁄2 cups Oreo cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1 cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups heavy cream
  • 10 ounces bittersweet chocolate, chopped
  • 3⁄4 cup heavy cream
  • 6 oz. bittersweet chocolate, finely chopped
  • 1 tablespoon granulated sugar

Instructions

  1. Finely crush the Oreo cookies in a food processor until they resemble crumbs. Add the melted butter and blend until evenly moistened. Press mixture onto the bottom of a lightly greased 9-inch springform pan. Place in the freezer.
  2. Melt 10 ounces of bittersweet chocolate and set aside to cool. Beat cream cheese and powdered sugar together until smooth.
  3. In a separate bowl, whip 2 cups of heavy cream until soft peaks form. Add vanilla and continue whipping until stiff peaks form.
  4. Gently fold cream cheese mixture into the whipped cream until combined.
  5. Divide mixture into two equal portions; fold melted chocolate into one portion and pour over the Oreo crust.
  6. Spoon second half of mixture over the chocolate layer, spreading evenly.
  7. Chill cheesecake in the refrigerator for at least one hour.
  8. Combine 3⁄4 cup heavy cream, chopped chocolate, and sugar in a saucepan. Stir over low heat until smooth. Cool slightly and pour over cheesecake.
  9. Run a knife around the edges and remove springform pan sides. Slice with a sharp knife. Optionally drizzle with chocolate sauce before serving.

Notes

For best results, use room temperature cream cheese and let the cheesecake chill properly.
