- 2 1/2 cups Oreo cookie crumbs
- 6 tablespoons unsalted butter, melted
- 4 (8 oz.) packages cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- 10 ounces bittersweet chocolate, chopped
- 3/4 cup heavy cream (for topping)
- 6 oz. bittersweet chocolate, finely chopped (for topping)
- 1 tablespoon granulated sugar (for topping)
Instructions
- Prepare the Oreo Crust: Blend the Oreo cookies into fine crumbs using a food processor. Add the melted butter and mix until the crumbs are moistened. Press into the bottom of a 9-inch springform pan and freeze.
- Prepare the Cheesecake Filling: Melt the bittersweet chocolate and let cool. Beat cream cheese and powdered sugar until smooth. Whip 2 cups of heavy cream until stiff peaks form, then fold into the cream cheese mixture. Divide, adding chocolate to one half and layering over the Oreo crust and plain cheesecake mixture over it. Refrigerate for at least an hour.
- Prepare the Chocolate Topping: Heat heavy cream, chocolate, and sugar in a saucepan until smooth. Let cool slightly and pour over the cheesecake. Chill until set.
- Remove the sides of the springform pan and serve chilled.
Notes
For best results, chill the cheesecake for at least 2-3 hours or overnight before serving. Store covered in the refrigerator for 3-4 days.
