- 2 1/2 cups Oreo cookie crumbs
- 6 tablespoons unsalted butter, melted
- 4 (8 oz.) packages cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- 10 ounces bittersweet chocolate, chopped
- 3/4 cup heavy cream (for topping)
- 6 oz. bittersweet chocolate, finely chopped (for topping)
- 1 tablespoon granulated sugar
Instructions
- Blend the Oreo cookies into fine crumbs using a food processor. Add the melted butter and mix until the crumbs are moistened. Press the mixture into the bottom of a 9-inch springform pan and freeze.
- Melt the bittersweet chocolate and allow it to cool. Beat together the cream cheese and powdered sugar until smooth. Whip 2 cups of heavy cream until soft peaks form, then add vanilla and continue whipping until stiff peaks form. Fold the cream cheese mixture into the whipped cream.
- Divide the mixture in half. Mix melted chocolate into one half. Layer chocolate mixture over the crust, then layer plain cheesecake mixture on top. Refrigerate for at least an hour to set.
- For the topping, heat heavy cream, chocolate, and sugar in a saucepan until smooth. Let it cool slightly, then pour it over the cheesecake. Chill for 2-3 hours or overnight before serving.
- Slice into wedges and serve with whipped cream or chocolate drizzle.
Notes
For best results, chill the cheesecake overnight. Use quality bittersweet chocolate for enhanced flavor.
