- 2 1/2 cups Oreo cookie crumbs
- 6 tablespoons unsalted butter, melted
- 4 (8 oz.) packages cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups heavy cream
- 10 ounces bittersweet chocolate, chopped
- 3/4 cup heavy cream (for topping)
- 6 oz. bittersweet chocolate (for topping), finely chopped
- 1 tablespoon granulated sugar
Instructions
- Prepare the Oreo Crust: Blend Oreo cookies into fine crumbs. Add melted butter and mix until damp. Press into a greased 9-inch springform pan and freeze.
- Prepare the Cheesecake Filling: Melt bittersweet chocolate and let cool. Beat cream cheese and powdered sugar until smooth. Whip 2 cups heavy cream to soft peaks, then add vanilla and whip to stiff peaks. Fold cream mixture into whipped cream, split in half; mix chocolate into one half. Layer the chocolate mixture over the crust, then add the plain mixture and refrigerate for at least an hour.
- Prepare the Chocolate Topping: Heat heavy cream, chocolate, and sugar over low heat, stirring until smooth. Cool slightly and pour over cheesecake. Allow to set and release from the pan.
- Chill for 2-3 hours or overnight before serving. Slice and serve chilled.
Notes
For best results, let the cheesecake chill overnight. Ensure cream cheese is at room temperature for easy mixing. Avoid over-whipping cream.
