- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 1/4 cups milk
- 1/2 cup unsalted butter, softened
- 1 tablespoon vanilla extract
- 4 large egg whites
- Purple food coloring
- 2 cups unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 2 teaspoons vanilla extract (for frosting)
- 2 tablespoons milk (for frosting)
- Blue food coloring
- Yellow food coloring
- Fondant
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, softened butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
- Add purple food coloring until you reach the desired lavender shade.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely on a wire rack.
- To make the frosting, beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth. Add vanilla extract and milk, mixing until fluffy. Add purple food coloring to get a lavender shade.
- Place one cake layer on a serving plate and spread a layer of frosting over the top. Place the second cake layer on top and frost the entire cake with the remaining lavender frosting.
- For the peacock feathers, roll out the fondant, cut it into feather shapes, and use blue and yellow food coloring to paint the details. Arrange the feathers on the side of the cake.
- Create the peacock body and head with fondant or a small toy and place it on top of the cake.

Ensure all ingredients are at room temperature for better mixing. Practice rolling out fondant before decorating.
