- 4 lamb shanks
- 2 lbs potatoes, peeled and cubed
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 sprigs rosemary
- Salt, to taste
- Black pepper, to taste
- 2 cups vegetable broth
Instructions
- Preheat the oven to 350°F (175°C).
- Season the lamb shanks with salt and black pepper.
- In a large oven-safe pot, heat the olive oil over medium heat.
- Brown the lamb shanks on all sides.
- Remove the shanks from the pot and sauté the garlic until fragrant.
- Add the potatoes, rosemary, and vegetable broth to the pot.
- Return the lamb shanks to the pot, cover it, and transfer it to the oven.
- Bake for about 120 minutes or until the lamb is tender.
- Serve hot, placing each lamb shank on a plate with a generous scoop of potatoes and some of the cooking juices.
Notes
For extra flavor, marinate the lamb shanks in herbs and olive oil overnight. Remove the lid during the last 20 minutes of baking for a thicker sauce.
