Description

A rich and creamy Indian dessert that’s the perfect frozen treat for hot days.


Ingredients

  • 2 cups full-fat milk
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1/4 cup sugar
  • 1/2 teaspoon ground cardamom
  • Pinch of saffron strands (optional)
  • 1/4 cup chopped pistachios (optional)
  • 1 tablespoon rose water or kewra essence (optional)

Instructions

  1. In a heavy-bottomed pan, heat the full-fat milk over medium heat. Stir frequently and let it simmer until the milk reduces by about one-third, approximately 15-20 minutes.
  2. Add the heavy cream and condensed milk to the reduced milk, stir well and cook for another 10-15 minutes on low heat until thickened. Mix in the sugar until dissolved.
  3. Stir in the ground cardamom and saffron strands (if using). Add the rose water or kewra essence, if desired, and simmer for another 5 minutes.
  4. Remove from heat, cool to room temperature, and strain if preferred.
  5. Pour the kulfi mixture into molds, adding chopped pistachios if desired. Cover and freeze for at least 6 hours or overnight.
  6. To serve, dip molds in warm water to release kulfi. Garnish with more pistachios or crushed rose petals if desired.

Notes

For different flavors, you can add ingredients like mango puree or chocolate before freezing.
