A hearty dish combining flavorful kielbasa sausage, tangy homemade sauerkraut, and fluffy rice, topped with fresh garden tomatoes.
Ingredients

- 1 lb Kielbasa sausage
- 2 cups Homemade sauerkraut
- 1 cup Rice
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 tbsp Butter
- 2 cups Vegetable broth or water
- 2 Tomatoes, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, cook sliced kielbasa over medium heat until browned.
- In a separate pot, melt butter and sauté onion and garlic until translucent.
- Add rice and stir for a couple of minutes.
- Pour in vegetable broth or water and bring to a boil. Reduce heat, cover, and simmer until rice is cooked.
- Stir in the homemade sauerkraut and cook until heated through.
- Serve kielbasa on a bed of rice pilaf and garnish with fresh tomatoes. Season with salt and pepper to taste.
Notes
For extra flavor, try adding spices like paprika or herbs like thyme when cooking the rice. Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen for up to 2-3 months.
