- 1 1⁄2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 4 ounces cream cheese, softened
- 6 egg yolks
- 2 (14 ounce) cans sweetened condensed milk
- 1 cup key lime juice
- Zest of 2 regular limes or 4 key limes
- 1 cup cold heavy cream
- 1 tablespoon powdered sugar
- Lime zest for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or foil, lightly sprayed with cooking spray, and set aside.
- Mix the graham cracker crumbs, 1/4 cup sugar, and 6 tablespoons melted butter until combined. Press this mixture evenly into the bottom of the pan. Bake for 10 minutes, then reduce the oven temperature to 300°F (150°C) and let the crust cool.
- In a large bowl, beat the softened cream cheese until smooth. Blend in the egg yolks, then gradually add the sweetened condensed milk, key lime juice, and lime zest. Pour this mixture over the cooled crust and bake for 35-40 minutes until slightly jiggly but set.
- Cool at room temperature for 30 minutes, then refrigerate for 2-3 hours.
- Beat the cold heavy cream and 1 tablespoon powdered sugar until stiff peaks form. Spread this whipped cream over the chilled bars and chill for another 30 minutes.
- Lift the bars from the pan using the parchment paper, cut into squares, and garnish with lime zest before serving.
Notes
Make sure the cream cheese is softened to room temperature for easy mixing. Adjust the amount of lime juice based on desired tanginess.
