Ingredients

  • 1 3/4 cups graham cracker crumbs (about 10 crackers)
  • 6 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 7 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 2 (14 oz) cans sweetened condensed milk
  • 3/4 cup lime juice
  • 1 1/2 tablespoons lime zest
  • 1/4 teaspoon salt
  • 3 cups blackberries (fresh or frozen)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • Pinch of salt
  • Pinch of cinnamon
  • 2 teaspoons lemon juice
  • Freshly whipped cream (for serving)
  • Fresh blackberries (for serving)
  • Lime slices (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter together until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  2. Use a stand mixer with a paddle attachment to beat the cream cheese until light and creamy. Gradually add sweetened condensed milk and continue to beat until smooth. Then mix in lime juice, lime zest, and salt until well combined. Pour the filling into the cooled crust and bake for 15-17 minutes, or until set. Let it cool for at least 30 minutes, then refrigerate for at least 3 hours.
  3. In a medium saucepan, cook blackberries over medium heat until softened, about 3-4 minutes. In another bowl, mix sugar, cornstarch, salt, and cinnamon. Add mixture to blackberries and keep cooking until thickened, about 2-3 minutes. Remove from heat and stir in lemon juice. Let it cool completely in the refrigerator.
  4. Before serving, top the chilled cheesecake with the blackberry topping. Add whipped cream, fresh blackberries, and lime slices for decoration.

Notes

Serve chilled for the best flavor. Store in the refrigerator for up to 5 days. Maintain topping separately until serving.
