- 1 tablespoon gelatin (1 envelope)
- 2 tablespoons cold water
- 2 cups heavy cream
- 1 cup milk of choice (e.g., unsweetened coconut milk)
- 1/3 cup allulose (or preferred keto sweetener)
- 2 teaspoons vanilla extract
Instructions
- Lightly grease eight 1/2-cup or four 1-cup ramekins and set aside. In a small bowl, whisk together the gelatin and cold water. Let it sit to thicken.
- In a saucepan, add the heavy cream, milk, allulose, and vanilla extract. Heat over medium heat, stirring regularly, until it begins to boil. Once boiling, reduce the heat to very low and simmer for a few minutes.
- Remove the saucepan from heat and whisk in the thickened gelatin mixture until fully combined and smooth.
- Pour the panna cotta mixture into the prepared ramekins and allow them to cool to room temperature. Once cooled, refrigerate for at least 240 minutes or overnight until firm.
- To serve, run a slightly wet knife around the edges of the ramekins for easy removal. Turn each ramekin upside down onto a plate and enjoy your keto panna cotta, garnished with fresh berries or sugar-free syrup if desired!
Notes
Ensure not to boil the cream mixture for too long to maintain the texture. Can be made dairy-free with coconut milk.
