  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, drained
  • 1/2 cup powdered sugar
  • 2 tablespoons pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture in three parts, alternating with the sour cream, starting and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the crushed pineapple until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk together the powdered sugar and pineapple juice to make a glaze. Drizzle over the cooled cake.

Notes

Make sure to drain the crushed pineapple well to avoid a soggy cake. Use softened butter for easy mixing. Don’t overmix the batter after adding the flour to keep the cake fluffy.
