- 4 (8 oz) packages cream cheese, softened

- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup strawberry or raspberry jam
- Whipped cream for garnish
- 1 cup powdered sugar for icing
- 2 tbsp milk for icing
- Extra jam (optional)
Instructions
- Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of the pan to form the crust.
- Beat cream cheese until smooth. Add sugar, sour cream, vanilla, and lemon juice. Mix until well combined.
- Add eggs one at a time, mixing gently. Pour the cheesecake batter over the crust.
- Bake for 50-60 minutes or until set. Allow cooling in the oven with the door cracked for 1 hour, then chill in the fridge for at least 4 hours or overnight.
- Preheat the oven to 375°F (190°C) and line a 10×15-inch jelly roll pan with parchment paper.
- Beat eggs for about 5 minutes until frothy and pale. Gradually add sugar, then water, and vanilla. Beat until smooth.
- Sift together flour, baking powder, and salt. Gently fold this into the egg mixture. Spread the batter evenly in the pan.
- Bake for 12-15 minutes until lightly golden. Roll the warm cake in a towel dusted with powdered sugar and allow cooling completely.
- Unroll the cake and spread jam on top. Re-roll the cake tightly.
- Once the cheesecake is chilled, remove it from the springform pan. Slice the jelly roll into 1-inch slices and arrange on top of the cheesecake.
- Drizzle icing over the jelly roll slices and garnish with whipped cream. Serve and enjoy!
Notes
Ensure cream cheese is fully softened to avoid lumps. Customize flavors with different jams.
