  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15 inch baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cornstarch, baking powder, and salt.
  3. In another bowl, beat the eggs and granulated sugar until light and fluffy. Stir in the milk and vanilla extract. Gradually fold in the dry ingredients until just combined.
  4. Gently fold the cotton candy into the batter, ensuring it’s evenly distributed.
  5. Pour the batter onto the prepared baking sheet, spreading it evenly. Bake for 10-12 minutes, or until the cake is golden and springs back when lightly touched.
  6. Once baked, let the cake cool for a few minutes. Place a clean kitchen towel over the cake and gently roll it up from one end while it’s still warm. Let it cool completely in the rolled position.
  7. In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Unroll the cooled cake and spread the whipped cream evenly over the surface. Carefully roll the cake back up without the towel.
  9. Sprinkle additional cotton candy on top for decoration.
  10. Refrigerate the cake roll for at least an hour before slicing and serving.

Notes

Store in an airtight container in the refrigerator for up to three days. Use room temperature eggs for better mixing.
