Ingredients

  • 1 whole chicken (about 34 lbs), cleaned
  • 2 medium onions, peeled and quartered
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, peeled
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (like thyme or parsley)
  • Water or chicken broth

Instructions

  1. In a large pot, add the cleaned chicken and cover with water or chicken broth.
  2. Bring to a boil over medium-high heat.
  3. Skim off any foam that rises to the surface.
  4. Add the onions, carrots, celery, and garlic to the pot.
  5. Season with salt, pepper, and herbs.
  6. Reduce heat to low and let simmer for about 90 to 120 minutes until the chicken is cooked through and tender.
  7. Remove the chicken from the pot, shred the meat, and return it to the soup.
  8. Adjust seasoning to taste and serve hot.

Notes

Use homemade chicken broth for richer flavor. Add other vegetables for variety, or pasta for a noodle version.
