- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 zucchini, chopped
- 1 bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened (about 5 minutes).
- Stir in garlic, zucchini, and bell pepper; cook for another 3-4 minutes.
- Add the diced tomatoes, broth, oregano, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
