Ingredients

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 zucchini, chopped
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened (about 5 minutes).
  2. Stir in garlic, zucchini, and bell pepper; cook for another 3-4 minutes.
  3. Add the diced tomatoes, broth, oregano, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  4. Adjust seasoning to taste.
  5. Serve hot, garnished with fresh parsley.
