Description

A delicious strawberry cake with moist layers of vanilla cake and creamy frosting, perfect for celebrations.


Ingredients

  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup fresh strawberries, pureed
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1/4 cup fresh strawberry puree (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Fresh strawberries, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and strawberry puree.
  4. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing well. Add the strawberry puree and vanilla extract, beating until smooth and fluffy.
  7. Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top and frost the top and sides of the entire cake.
  8. Garnish with fresh strawberries on top before serving.

Notes

For added freshness, use ripe strawberries and consider adding a layer of sliced strawberries between cake layers.
