- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 cup fresh strawberries, pureed
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 1/4 cup fresh strawberry puree (for frosting)
- 1 tsp vanilla extract (for frosting)
- Fresh strawberries, for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and strawberry puree.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, mixing well. Add the strawberry puree and vanilla extract, beating until smooth and fluffy.
- Once the cakes are completely cool, frost the top of one cake layer, then place the second layer on top and frost the top and sides of the entire cake.
- Garnish with fresh strawberries on top before serving.
Notes
For added freshness, use ripe strawberries and consider adding a layer of sliced strawberries between cake layers.
