Instructions

  1. Preheat the oven to 350°F (177°C). Line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, beat the eggs and granulated sugar until light and fluffy.
  4. Incorporate buttermilk, vanilla extract, and red food coloring into the egg mixture.
  5. Gradually fold in the dry ingredients until just combined.
  6. Pour the batter into the prepared pan, spreading it evenly.
  7. Bake for 12-15 minutes.
  8. While the cake is still warm, carefully roll it in the parchment paper. Allow it to cool completely.
  9. In a mixing bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  10. Unroll the cooled cake, spread the filling evenly, and then re-roll it tightly.
  11. Refrigerate for 1 hour before slicing.

Notes

Make sure to roll the cake while it’s warm to prevent cracks. For a stronger red color, add an extra drop of food coloring.
