- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (10 oz) can diced tomatoes with green chilies
- 2 cups elbow macaroni (uncooked)
- 1 1/2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 tablespoon Worcestershire sauce
- 1 teaspoon mustard
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- Drain excess fat if needed.
- Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until softened and fragrant.
- Stir in the beef broth, diced tomatoes with green chilies, Worcestershire sauce, and mustard. Bring the mixture to a boil.
- Once boiling, add the uncooked elbow macaroni. Reduce the heat and simmer for about 10 minutes or until the macaroni is tender.
- Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste. Garnish with fresh parsley if desired.
- Serve hot and enjoy your comforting, cheesy soup!
