Description

A rich and creamy dessert featuring layers of cheesecake filling, chocolate ganache, brownie bits, toasted coconut, and nuts, all without baking!


Ingredients

  • 8 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3/4 tsp vanilla extract
  • 1 cup heavy cream
  • 1/2 cup heavy cream (for ganache)
  • 1/4 cup butter
  • 1 1/4 cups mini dark chocolate chips
  • 1/4 cup toasted coconut
  • 1/4 cup coarsely chopped nuts
  • Store-bought or homemade brownies, cut into cubes

Instructions

  1. Make the Ganache: In a small saucepan, melt the butter and 1/2 cup of cream together over low heat. Stir in 3/4 cup of chocolate chips until smooth. Let cool and stir in the remaining chocolate chips.
  2. Cheesecake Filling: In a large bowl, beat the heavy cream until stiff peaks form. In another bowl, mix cream cheese, sugar, and vanilla until smooth. Gently fold in the whipped cream.
  3. Toast Coconut: Preheat oven to 350°F (180°C). Spread coconut on a baking sheet and toast until golden, about 5-10 minutes. Let cool.
  4. Assemble Parfaits: Layer cheesecake filling, ganache, and brownie cubes in clear glasses. Repeat layers and top with coconut, nuts, and extra chocolate chips.
  5. Chill & Serve: Cover and refrigerate for 3-5 hours or overnight before serving.

Notes

Serve with a dollop of whipped cream or extra toasted coconut for an extra touch. Store leftovers in the refrigerator and consume within 3 days.
