A decadent chocolate cake filled with gooey marshmallows and creamy peanut butter, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup peanut butter
  • 1 cup chocolate ganache
  • 2 cups marshmallows
  • 1/2 cup crushed peanuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch cake pans.
  2. In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat everything until smooth.
  4. Carefully stir in the boiling water.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for a few minutes before transferring them to a wire rack to cool completely.
  8. Once the cakes are cool, spread peanut butter between the layers.
  9. Coat the whole cake with chocolate ganache.
  10. Top with marshmallows and broil or use a kitchen torch to toast the marshmallows until golden.
  11. Finally, sprinkle crushed peanuts on top for added crunch.
  12. Let the cake cool for 30 minutes before serving.

Notes

For a denser cake, substitute some all-purpose flour with cake flour. Ensure baking powder and baking soda are fresh for the best rise.
