- 1 1/2 cups graham cracker crumbs
- 1/2 cup melted butter
- 16 oz cream cheese
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup chocolate chips
- 1/2 cup chopped cherries
- 1 cup chocolate ganache
- Fresh cherries for topping
Instructions
- Preheat your oven to 325°F.
- In a bowl, mix the graham cracker crumbs with the melted butter until well combined. Press this mixture into the bottom of a springform pan to form the crust.
- In another bowl, beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
- Gently fold in the chocolate chips and chopped cherries until evenly distributed.
- Pour the cheesecake mixture over the prepared crust in the springform pan.
- Bake in the preheated oven for about 50 minutes, or until the center is set.
- Once baked, allow the cheesecake to cool completely. Spread the chocolate ganache on top before serving.
- Garnish with fresh cherries for a lovely finish.
Notes
For best results, use softened cream cheese and high-quality chocolate for the ganache.
