Description

Delightful cupcakes filled with vanilla pudding and topped with glossy chocolate ganache, inspired by the classic Boston cream pie.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup vanilla pudding (store-bought or homemade)
  • 1 cup chocolate ganache (for topping)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine the flour and baking powder; set aside.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, followed by the vanilla extract. Mix well.
  5. Gradually add the flour mixture to the wet ingredients, alternating with milk. Stir until just combined.
  6. Fill the cupcake liners about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow the cupcakes to cool completely.
  9. Once cooled, cut a small hole in the center of each cupcake and fill with vanilla pudding.
  10. Top each cupcake with chocolate ganache.
  11. If desired, dust with powdered sugar before serving. Enjoy!

Notes

These cupcakes can be stored in an airtight container in the refrigerator for 3-5 days, or frozen without ganache for up to 2 months.
