Description

A flavorful dish of grilled chicken served over fragrant saffron rice with a creamy herb yogurt sauce.


Ingredients

  • 600g chicken breast, cut into chunks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp turmeric
  • Salt & black pepper to taste
  • Juice of 1/2 lemon
  • 1 tbsp fresh parsley, chopped
  • 1 1/2 cups basmati rice
  • 3 cups water
  • Pinch of saffron threads
  • 1 tbsp butter
  • 1 cup plain Greek yogurt
  • 1 small garlic clove, minced
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Marinate chicken chunks with olive oil, lemon juice, paprika, cumin, garlic powder, turmeric, salt, and pepper for at least 30 minutes (or overnight for deeper flavor).
  2. Grill or pan-fry the chicken over medium-high heat until fully cooked and nicely charred.
  3. For the rice, cook basmati rice with saffron, butter, salt, and water until fluffy.
  4. Mix all sauce ingredients until smooth.
  5. Serve grilled chicken over a bed of saffron rice, drizzle generously with yogurt sauce, and garnish with lemon slices and parsley. Enjoy hot!

Notes

Marinating the chicken overnight will deepen the flavors. Using fresh saffron will give the rice the best taste and color.
