- 1 1/2 cups red velvet cake crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 cup fresh strawberries, chopped
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup sugar (for topping)
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the red velvet cake crumbs and melted butter. Press this mixture firmly into a greased 9-inch pan to create the crust.
- In another bowl, beat together the cream cheese, sugar, eggs, vanilla extract, and heavy cream until the mixture is smooth.
- Gently fold in the chopped strawberries.
- Pour this mixture over the crust in the pan.
- Bake in the preheated oven for 50-60 minutes, or until set.
- Once baked, let the cheesecake cool completely, then refrigerate for at least 4 hours.
- Before serving, sprinkle 1/4 cup of sugar evenly on top of the cheesecake. Use a kitchen torch to caramelize the sugar for a crispy topping.
Notes
Ensure your cream cheese is softened well to avoid lumps. Use fresh strawberries for the best flavor. Can be stored in the refrigerator for up to a week.
