  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup fresh strawberries, chopped
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the red velvet cake crumbs and melted butter. Press this mixture firmly into a greased 9-inch pan to create the crust.
  3. In another bowl, beat together the cream cheese, sugar, eggs, vanilla extract, and heavy cream until the mixture is smooth.
  4. Gently fold in the chopped strawberries.
  5. Pour this mixture over the crust in the pan.
  6. Bake in the preheated oven for 50-60 minutes, or until set.
  7. Once baked, let the cheesecake cool completely, then refrigerate for at least 4 hours.
  8. Before serving, sprinkle 1/4 cup of sugar evenly on top of the cheesecake. Use a kitchen torch to caramelize the sugar for a crispy topping.
