- 1 cup crushed graham crackers

- Chocolate or white chocolate for coating
Instructions
- Combine cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice in a mixing bowl and mix until smooth.
- Fold in the crushed graham crackers and nuts if using.
- Chill the mixture in the refrigerator for about 30 minutes to make it easier to handle.
- Scoop out small amounts of the mixture and roll them into balls.
- Melt the chocolate or white chocolate and dip each pumpkin ball into the melted chocolate, allowing excess to drip off.
- Place the coated balls on a parchment-lined baking sheet and refrigerate until set.
- Serve chilled and enjoy!
