  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons instant coffee granules
  • 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1 tablespoon instant coffee granules
  • 8 oz mascarpone cheese
  • Chocolate shavings for garnish
  • Coffee beans for garnish
  • Cocoa powder for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a mixing bowl, combine the chocolate cookie crumbs with melted butter, mixing until well combined. Press the mixture firmly into the bottom of the prepared pan and set aside.
  3. In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Dissolve the coffee granules in the hot water, then add it to the cream cheese mixture along with the vanilla extract.
  4. Add the eggs one at a time, beating well after each addition until just combined. Pour the filling over the crust, smoothing the top with a spatula.
  5. Bake the cheesecake for 55-60 minutes, or until the center is set. Allow it to cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
  6. In a mixing bowl, whip the heavy cream, sugar, and coffee granules together until soft peaks form. Gently fold in the mascarpone cheese until the mixture is smooth and creamy.
  7. Spread the mousse evenly over the chilled cheesecake.
  8. Just before serving, garnish with chocolate shavings, coffee beans, and a dusting of cocoa powder.

Notes

Ensure cream cheese is at room temperature for a smooth filling. Adjust coffee granules to taste for a richer flavor.
