Description

A delightful dessert that combines cake and ice cream for a perfect treat on warm days.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 2 cups of your favorite ice cream, softened
  • 1/2 cup chocolate chips or chopped nuts (optional)
  • 1/4 cup caramel or chocolate syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add eggs one at a time, then add the vanilla.
  4. Gradually mix in the dry ingredients alternately with milk until smooth.
  5. Pour the cake batter into the prepared loaf pan and bake for 30-35 minutes or until a toothpick comes out clean. Cool completely.
  6. Soften the ice cream at room temperature for 5-10 minutes and mix in chocolate chips or nuts if desired.
  7. Slice the cooled cake into layers, spread ice cream in between layers, and drizzle with syrup on top if using.
  8. Cover with plastic wrap and freeze for at least 4 hours until firm.

Notes

For best results, use softened butter and your favorite ice cream flavor. Store in the freezer for freshness.
