Description

Ranch-Style Eggs are a hearty breakfast option with crispy corn tortillas and sunny-side-up eggs, topped with flavorful ingredients.


Ingredients

  • 4 corn tortillas
  • 4 large eggs
  • 1 tablespoon vegetable oil
  • 1 cup refried beans (optional)
  • 1 cup salsa roja
  • 1/2 cup crumbled queso fresco
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Optional: pickled jalapeños, hot sauce

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Lightly fry the corn tortillas one at a time until warm and slightly crispy. Set aside.
  3. In the same skillet, fry the eggs sunny-side up until the whites are cooked, but the yolks are still runny. Season with salt and pepper.
  4. Warm the refried beans if using, and spread a thin layer onto each tortilla.
  5. Place a fried egg on top of each tortilla.
  6. Spoon salsa over the eggs.
  7. Top with queso fresco, sliced avocado, cilantro, and any optional garnishes.
  8. Serve immediately while hot.

Notes

Serve on a large plate with extra salsa and toppings. Store leftovers separately for best texture.
