- 4 corn tortillas
- 4 large eggs
- 1 tablespoon vegetable oil
- 1 cup refried beans (optional)
- 1 cup salsa roja
- 1/2 cup crumbled queso fresco
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- Salt and pepper to taste
- Optional: pickled jalapeños, hot sauce
Instructions
- Heat the vegetable oil in a skillet over medium heat.
- Lightly fry the corn tortillas one at a time until warm and slightly crispy. Set aside.
- In the same skillet, fry the eggs sunny-side up until the whites are cooked, but the yolks are still runny. Season with salt and pepper.
- Warm the refried beans if using, and spread a thin layer onto each tortilla.
- Place a fried egg on top of each tortilla.
- Spoon salsa over the eggs.
- Top with queso fresco, sliced avocado, cilantro, and any optional garnishes.
- Serve immediately while hot.
Notes
Serve on a large plate with extra salsa and toppings. Store leftovers separately for best texture.
