Ingredients

  • 320 grams high-gluten flour
  • 160 grams low-gluten flour
  • 40 grams fine sugar
  • 5 grams salt
  • 20 grams fresh yeast
  • 265 grams water
  • 20 grams butter

Instructions

  1. Combine all ingredients except the butter in a large bowl. Knead until a dough forms, then add the butter and continue kneading until the dough is smooth.
  2. After kneading, divide the dough into equal pieces based on how many pizzas you want to make.
  3. Roll each piece into a round shape, use a bowl to make an imprint on the dough, then roll up the edges. Use a fork to prick the center of each dough circle.
  4. Let the dough ferment until it is 1.5 times its original size. Preheat the oven to 200°C (392°F) for 10 minutes.
  5. Add your choice of toppings to the shaped dough and bake in the oven at 190°C (374°F) for 15 minutes.

Notes

For a crispier crust, use a pizza stone. Make your dough rise in a warm place for best results.
