A delicious side dish featuring sweet potatoes roasted to perfection with feta cheese and pecans.

- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp ground cinnamon (optional)
- Feta cheese, crumbled (to taste)
- Pecans, chopped (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and ground cinnamon until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes or until golden brown and tender, flipping halfway through.
- Remove from the oven and sprinkle crumbled feta and chopped pecans over the top.
- Serve immediately.
Notes
Cut sweet potatoes into uniform cubes for even cooking. Variations include using regular potatoes or different nuts.
