Description

A delicious side dish featuring sweet potatoes roasted to perfection with feta cheese and pecans.


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon (optional)
  • Feta cheese, crumbled (to taste)
  • Pecans, chopped (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, and ground cinnamon until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25-30 minutes or until golden brown and tender, flipping halfway through.
  5. Remove from the oven and sprinkle crumbled feta and chopped pecans over the top.
  6. Serve immediately.

Notes

Cut sweet potatoes into uniform cubes for even cooking. Variations include using regular potatoes or different nuts.
