  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon (optional)
  • Feta cheese (to taste)
  • Pecans (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sweet potatoes, olive oil, salt, black pepper, and cinnamon.
  3. Spread the potatoes on a baking sheet in a single layer.
  4. Roast in the oven for about 25-30 minutes or until tender and golden, tossing halfway through.
  5. Once out of the oven, sprinkle with feta cheese and chopped pecans before serving.

Notes

Cut sweet potatoes into even cubes for even cooking. Adjust feta and pecans to taste, and consider drizzling honey for added flavor.
